From these two kinds of raw coffee, the products corresponding to the quality standards required by the company are selected.

Arabica

Coming from Central and South America, a prized kinds with a sweet and aromatic taste.

Grain: Oval

Furrow: Sinuous “S” shape

Caffeine: 0.7% – 1.5%

Sensations: Greater acidity and sweetness.

Robusta

Coming from the African continent, a prized kinds with a sweet and intense taste.

Grain: Round and Dark

Furrow: Central and straight in the shape of an “l”

Caffeine: 1.7% – 3.5%

Sensations: Bitter, woody and acerb.

ROASTING

The roasting takes place by type of grain, allowing an individual cooking regime with hot air, an attentive temperature control, with the possibility of carrying out targeted interventions during roasting, obtaining a homogeneous and optimal final result for each quality of grain.

During the roasting phase, the roasting machine carries out the ancient procedure, and achieves the right cooking thanks to the constant control of the master roaster, achieving the perfect balance between temperature and cooking time.

After roasted, the coffee comes out of the roasting machine and immediately cooled through a forced air system, in order to prevent self-combustion from modifying the optimal degree of roasting achieved.

LABORATORY

In our artisan roasting, we use medium-sized machinery in order to manage the different requests in terms of quantity, allowing us to supply coffee that is always fresh from production. Roasting is the most important and delicate moment, always careful to dose the hot air well, based on average temperatures and longer cooking times.

WAREHOUSE

Our warehouse is rotating, so that our customers receive the last cooking in the maturation phase, this is because the coffee retains its full aroma for about 30 days, then some notes begin to fade.

Aged coffees, called “grand cru”, require a maturation time of up to 60 days to obtain a full taste and intense aromas.

MIXING AND PACKAGING

After a selected blending of the coffee varieties, the production process is concluded by proceeding with the packaging, this phase requires attention in order to prevent the roasted coffee from losing its aromatic and organoleptic characteristics.
